Porcini, one of the most difficult mushrooms to cultivate, due to its demand for specific environmental surroundings. Its flavours are unrivalled amongst the surface growing fungi and we’ve built this ragu around them. The light cultured taste of mascarpone and the springy texture of Swiss Brown mushrooms give body to the sauce, whilst a touch of truffle will ensure everyone in your home’s stomach will grumble in anticipation. Perfectly designed to transport happiness with each strand, your spaghetti will take centre stage at the table, dressed in our rich and creamy mushroom sauce.

La preparazione

  1. Bring the water to the boil in a large pot, salting it well. We suggest 1 litre of water per 100g of pasta and 2 teaspoons (10g) of salt per litre of water.
  2. Blanch the pasta in the rapidly boiling water for 3 to 6 minutes, depending on your preference for an al dente texture.
  3. Meanwhile, heat the sauce in a medium pan or saucepan. Bring it to a simmer, but turn off the heat before it reaches a boil.
  4. Strain the pasta through a colander and toss gently through the sauce.
  5. Arrange the pasta on a plate or in a bowl, spooning excess sauce over the top.
  6. Sprinkle with pangrattato, torn oregano leaves and shaved or grated Grana Padano.
  7. Buon appetito!

swiss brown mushrooms, onion, white wine, mascarpone (16.6%) (cream, cow’s milk, citric acid, sugar, potassium sorbate), cream (cow’s milk), butter (cow’s milk), garlic, dried porcini mushroom (2%), truffle oil (olive oil, black truffle (tuber aestivum)), oregano, thyme, salt, pepper
